White pepper is one of the most widely used pepper varieties and comes from the same plant as black and green pepper. White pepper is made from the ripe berries, which are traditionally immersed in water to remove the skin and then dried.
White pepper goes well with most things but is often used for seafood, pork, veal and lamb as well as vegetables such as spinach and mushroom stew. The pepper is also widely used for white sauces when you do not want the black dots that you otherwise get from black pepper.
