What is beta-carotene?
Beta-carotene belongs to the carotenoids. Carotenoids are colorful substances found in fruits and vegetables. It is the carotenoids that give plants their red, orange and yellow colors. Carotenoid-rich foods include carrot, pumpkin, apricot, papaya and peach. Carotenoids are also found in green plants, such as broccoli, spinach, nettles, arugula lettuce and green peas, but are hidden by the green color.
